Viticulture
Two travelers are walking along a path and come across an axe. One of the travelers says, “I found an axe!” But his partner says, “No, we found an axe.” Soon, the owner of the axe starts pursuing them, and the one who picked up
the axe said, “Oh no, we are doomed!” But his companion replied, “No, you are doomed.”
Four Tempranillo vineyard sites in this vintage. The pick calls for each site separately based on the taste of the fruit, striving for a balance between ripeness, tannin and acidity.
Vinification
Once at the winery, the fruit was destemmed. The grapes were fermented in stainless steel tanks with native yeast and given one pump over daily during fermentation. The grapes were pressed and sent to barrels after 3 weeks on the skins, allowing malolactic fermentation to occur naturally.
Tasting notes
Brimming with notes of blueberry cobbler, 90% cacao, and marzipan, this wine delights the senses. Sweet Baby Ray's mesquite BBQ sauce and dried Sicilian oregano add intriguing complexity to the nose. A velvety mouthfeel leads to a lingering finish that is both warm and deeply satisfying.
Winery Description
The Fableist is a collaboration between winemakers Curt Schalchlin and Andrew Jones. Curt, owner and vintner of the heralded winery Sans Liege, is known for his critically acclaimed Rhone varietal wines. Andrew, winemaker of Field Recordings, spends his days planning and planting vineyards and has stood foot in just about every vineyard on the Central Coast. Together, they produce The Fableist, a collaboration that gives special attention to the craft and story behind each wine. They listen to the vineyards and vines, harvest each bunch with gratitude, and work diligently to make wine. Sharing the same values, they were convinced that this collaboration would be a success. They know that each wine has a story to tell. The wines whispered to them and they listened to their stories until they were unleashed from the barrel and poured into bottles and into the hands of their customers. Grapes are sourced from Paso Robles and other Central Coast estates they know well. Many are made vegan, with minimal SO2 added. The labels on each bottle are inspired by Aesop's Fables. These fables were told to the people more than 2,500 years ago, around the 6th century B.C., by an ancient Greek slave named. Just as many fables have their own lessons, they believe that every wine has a story to tell and a lesson to impart. Wine has a profound power to inspire, to strengthen bonds with loved ones, and to warm the heart. We hope that someone who picks up a bottle of wine made by Schalchlin and Jones today will be inspired by what they have put into their fabulist wines.
