Viticulture

Grapes form selected sites in Paso Robles.

Vinification

Cabernet Sauvignon is hand-harvested at night around 25-25.5 brix. 100% destemmed. Cold-soaked for 5 days with 2 pumpovers each day.
Fermented in temperature-controlled tank. 

The Cabernet needs 4 weeks to get dry. Press juice and free run are aged
together in 30% American Oak and 70% concrete for 10 months with one racking after second fermentation is done.

Winery Description

 

Union Sacre is one of the most unique wineries on the Central Coast. Devoted to Alsance varieties only thing that can be said is it is treading a new path.  While other chase more mainstream things, this label, with its French born and raised winemaker, is doing things in a different way. Xavier Arnaudin studied winemaking in France and was supposed to go to Argentina for his first international winemaking internship. However, due to an unfortunate happening, he ended up in Paso Robles. Since arriving, he has never looked back.
