Production

Viticulture

Around 2010, Rajat Parr became convinced of the great potential for the pale red Trousseau grape on the Limestone soils of Stolpman Vineyards. Peter decided to support him and plant this esoteric grape from the Jura region of France. The first vintage was 2014 and there are now 2.3 acres of Trousseau planted.

Grapes were picked on August 17, 2017

Vinification

Crushed, pressed, and fermented in Stainless Steel down to 1.2 brix. the wine was then bottled under crown-cap to finish fermenting. Fermentation within the bottle naturally creates the desired carbon dioxide bubble. In March the wine was disgorged, yeast sediment removed,  from each bottle, and replaced the crown cap.

The wine was released in May 2018.  Total 2016 Production came in at 345 six-packs

Tasting notes

When tasted fresh, within the first year, Combe Trousseau Pet'Nat drinks pure and zesty with a brilliant pop of fizz. With time, the Pet'Nat develops more tropical fruit tones and weight. The 2017 shows inviting notes of apple, pear, and cherry with a soft and creamy palate. The mousse is fine and gentle. Very inviting!

Hidden in the hills of California’s Central Coast, on a rare Limestone outcropping & unobstructed from the Pacific Ocean wind, this unique land is ideally suited to grow Syrah and Roussanne grapes. Stolpman is committed to preserving this natural environment for thier vines through natural farming, dry farming, & sustainable employment. In the winery, they prefer native fermentation & minimal manipulation.


Dedicated to sensible farming & winemaking, they believe that they can create natural, vibrant, site-specific wines, with a focus unique to Ballard Canyon AVA, California. Their 220-acre property, of which 153 acres are currently planted to grapes, lies on three major limestone ridgelines in Santa Barbara County. By implementing revolutionary viticultural techniques, they push the dry-farmed limestone vines to unprecedented levels of quality.
