Viticulture
The grapes are carefully selected from key growers in the Paso Robles AVA, including our own vineyards.
Vinification
The fruit was sorted, de-stemmed, and transferred to tank. After a two-hour cold soak, the fruit was pressed, racked, and inoculated with yeast to start a long cool fermentation. After optimum sugar and acid levels were reached, fermentation was halted by chilling the wine down to 30˚ Fahrenheit. The wine was kept chilled for two months to maintain the aromas, phenols, and a natural effervescence. After a final filtration, the wine was bottled and released.
Tasting notes
The Muscat Canelli reveals enticing aromas of Jasmine blossoms and Mandarin zest intermingled with flavors of white peach, Meyer lemon, ginger, with bursts of guava.

We suggest cantaloupe wrapped with Prosciutto, dried fruits and nuts or Gary Eberle’s favorite, goat cheese on crostini.

Driving Force Behind the Wine Industry in Paso Robles
Gary Eberle is one of the pioneers of the wine industry in Paso Robles. He was part of a small group of early winemakers that lead the charge to get Paso Robles certified as an appellation, while at the same time establishing his own winery. Gary was fascinated by Syrah, which was not yet planted in California. Based on the seedlings of California State University, Davis owned that had been grown in Chapoutier, Gary began planting clonal lines of Syrah in the field of 20 acres. The wine released in 1978 was the very first 100% Syrah in the United States. Wineries from all around became aware and gradually his new attempt, as a premium wine-producing area of the Rhone-based blend, Paso Robles has established its position today.
