Production: 100% destemmed.
Unfiltered. Unfined.
Native yeast.
Fermented on skins for 40 days at 55F.
Aged in 900 Gallons wood tank

Tasting notes

Orange blossom, honeysuckle, potpourri and chamomile. Slight bitterness complements the clean acidity and gorgeous fruitiness. The subtle nuances of star anise and jasmine will surely create the perfect marriage with Chinese cuisine.

Producer Description

Union Sacre is one of the most unique wineries on the Central Coast. Devoted to Alsance varieties only thing that can be said is it is treading a new path.  While other chase more mainstream things, this label, with its French born and raised winemaker, is doing things in a different way. Xavier Arnaudin studied winemaking in France and was supposed to go to Argentina for his first international winemaking internship. However, due to an unfortunate happening, he ended up in Paso Robles. Since arriving, he has never looked back.
