Viticulture
All grapes are from Rancho Solo Vineyard, a single vineyard in Monterey that is sustainably farmed.
Vinification
Harvested at night. Hand-sorted.
Fermented in tank for 3 weeks.
30% whole clusters.
Aged in 30% French Oak
Tasting notes
Aromas of fresh strawberries, cherries, and dried cranberries, with an impressive spicey complexity, including a touch of pepper. Smooth but firm tannins wrap around licorice and cassis flavors.
Producer Description
Union Sacre is one of the most unique wineries on the Central Coast. Devoted to Alsance varieties only thing that can be said is it is treading a new path. While other chase more mainstream things, this label, with its French born and raised winemaker, is doing things in a different way. Xavier Arnaudin studied winemaking in France and was supposed to go to Argentina for his first international winemaking internship. However, due to an unfortunate happening, he ended up in Paso Robles. Since arriving, he has never looked back.
