Viticulture
100% Pinot Noir from Spanish Springs vineyard in Edna Valley. One of the coolest growing sites nestled behind the famed Pismo Beach sand dunes of CA located three miles from the ocean with foggy coastal mornings and sunshine afternoons.
Vinification
Harvested at night. Hand-sorted.
Fermented in tank for 3 weeks.
30% whole clusters.
Aged in 30% French Oak
Tasting notes

Producer Description
Union Sacre is one of the most unique wineries on the Central Coast. Devoted to Alsance varieties only thing that can be said is it is treading a new path. While other chase more mainstream things, this label, with its French born and raised winemaker, is doing things in a different way. Xavier Arnaudin studied winemaking in France and was supposed to go to Argentina for his first international winemaking internship. However, due to an unfortunate happening, he ended up in Paso Robles. Since arriving, he has never looked back.
