Viticulture
Pinot Blanc is wild and rare in that it’s a genetic mutation, a fluke, of Pinot Noir. On the vine, where the fruit should be red, it grows white. A total délice or“delight” and favorite of Alsation-style wine.

Vinification
Skin contact overnight and pressed the next day.
Fermented in tank on fine lees
Aged in neutral French Oak 600 liters.
Tasting notes
Very light in the glass, this bottling shows a generous range of aromas, from freshly squeezed passion fruit to crisp pear, with mineral hints of chalk and ash as well. The palate is layered in texture, giving an edge to those tropical- and pome-fruit flavors.
Producer Description
Union Sacre is one of the most unique wineries on the Central Coast. Devoted to Alsance varieties only thing that can be said is it is treading a new path. While other chase more mainstream things, this label, with its French born and raised winemaker, is doing things in a different way. Xavier Arnaudin studied winemaking in France and was supposed to go to Argentina for his first international winemaking internship. However, due to an unfortunate happening, he ended up in Paso Robles. Since arriving, he has never looked back.
