Chicory and Prosciutto Appetizer
It's hot and humid, but this sligtly bitter chicory salad mached with a refreshing Sauvignon Blanc will make you feel refreshed. This is a simple appetizer made with bittersweet chicory and topped with prosciutto and mozzarella cheese. The salty, cured ham and spicy daikon sprouts accent the dish. Serve with a drizzle of olive oil. Great as a snack when you want to have a light drink or as an appetizer for parties or entertaining.
(Serves 2 / Cooking time: 5 minutes)
Ingredients
6 Chicory leaves
6 slices of prosciutto
3 pieces of cherry mozzarella cheese
1/4 pack of daikon sprouts (kaiware daikon)
Olive oil to taste
Instructions
Spread the cured ham and roll up 1/6th of the daikon sprouts on each side. Cut the mozzarella cheese in half.
Top the chicory with the prosciutto-covered daikon sprouts and mozzarella cheese. Drizzle with olive oil.
Tips
Immediately after removing the leaves, soak the chicory to cold water to prevent discoloration.
If you have long daikon sprouts, cut them into pieces according to the size of the chicory.
