Rajat and Pete's goal with Chenin Blanc is a trifecta of 1. Richness - they only pick the yellowed grapes. 2. High acid - they jump early and pick as soon as the color changes, rather than waiting for the entire crop to color up. 3. Ageworthy Nuance - achieved through careful farming and winemaking (concentrated fruit in the vineyard, preserve reduction and freshness in the winery)
Fermented and aged in neutral French Oak. 9 months in barrel.
